Dry wine that comes from an accurate selection of Corvina, Corvinone and Rondinella grapes. After they are harvested and hand-sorted in wooden crates, they are placed in well-ventilated lofts for a slowly and natural drying until January. Later, the grapes are destemmed and gently pressed.
The obtained must and grape marcs slowly ferment in stainless steel tanks.
Successively, the wine ages in small and medium-sized oak barrels, and then in glass bottles to conclude the refining process.
This product gains a ruby-red hue, the nose is intense and complex, with scents of ripe cherry, dehydrated plum, coffee, milk chocolate, nutmeg and an elegant balsamic note. On the palate is well-structured and the first sip confirms the aromatic impressions.
It pairs particularly well with red wine braised beef and with a series of typical local dishes like bollito with pearà, Monte Veronese cheese and soppressa (kind of headcheese) of Verona.
