The grapes’ withering technique (called “appassimento”) was invented by the Romans in order to cope with the weather conditions of Northern Italy: a moister and colder climate.
This technique has been carrying out for over two thousand years in special covered and well-ventilated rooms.
The company vineyards are trained using the traditional double pergola Veronese system, and the majority are situated on high hills and well-exposed terrain, where the most common soil is clayey and calcareous with abundant stone.
The manual harvest, the accurate vinification under a constant controlled grapes’temperature and the following refining in stainless steel barrels and in bottle make this sweet raisin wine, characterized by a great freshness and agreeableness, come to life.
